Resistant Starch Explained

What Resistant Starch Is, Beyond the SodaTide Label
Starch is normally broken down by amylase into glucose and absorbed in the small intestine. Resistant starch is not — it resists that process and reaches the large intestine intact, where bacteria ferment it.
Functionally, then, it behaves like a fermentable fibre despite being a starch. That makes it interesting for two reasons at once: it does not contribute glucose the way ordinary starch does, and it feeds the colonic microbiota.
The Four Types and How They Relate to SodaTide
Type 1 is physically inaccessible, locked inside intact plant cell walls — found in whole grains and seeds. Grinding destroys it, which is one reason whole grains behave differently from flour.
Type 2 resists digestion because of the granule's own crystalline structure. Raw potato starch and green banana are the classic examples, and this is the form used in potato resistant starch supplements including the one in SodaTide.
Type 3 is retrograded starch, formed when cooked starch cools and its molecules recrystallise into a form amylase struggles with. This is the kitchen-relevant type.
Type 4 is chemically modified starch produced industrially.
The Cooking Trick Worth More Than a SodaTide Capsule
Type 3 is the one you can create yourself, and the effect is not marginal.
Cook potatoes, rice or pasta, then refrigerate them overnight. As they cool, some of the gelatinised starch retrogrades into a resistant form. The resistant starch content rises measurably, and much of it persists even if you reheat the food afterwards.
So yesterday's rice, cold potato salad and pasta salad are all genuinely different foods from their freshly cooked versions, nutritionally speaking. The glucose response to them is lower and the fermentable content higher.
Other easy sources: slightly green bananas (the resistant starch converts to sugar as they ripen), lentils, beans and chickpeas, and whole oats.

Butyrate. Resistant starch is notably butyrogenic — its fermentation yields proportionally more butyrate than many other fibres. Butyrate is the primary fuel of colonocytes, and this is the most consistent finding in the field.
Post-meal glucose. Substituting resistant starch for digestible starch lowers the glucose response, which follows directly from it not being absorbed.
Insulin sensitivity. Several trials have reported improvements, with results varying by population and amount.
